Ahhh the avocado. It’s a beautiful food and nutrient dense with lots of heart healthy fats. Avocados are awesome, especially for little growing bodies and brains.
When you need to produce a quick and nutritious meal, turning to avocados is a great idea. I keep a constant supply. I buy them in bunches when they are still a little hard and keep them in a bowl on the counter. That way I always have a supply to use throughout the week.
You don’t need to pay the premium price for organic avocados. This fruit requires very few pesticides to grow. They also have thick skins which don’t allow for pesticide build up. It is still a good idea, however, to rinse the avocado before you slice into them.
Making guacamole for kids is quick and easy. Mash the meat of a few avocados in a bowl.
Squeeze the juice of 1/4 of a lemon. Add salt to taste and you’re done. That’s it. The whole process takes less than 2 minutes.
You can add cilantro, tomatoes, garlic, onions, cumin, cayenne, and lime juice as you choose based on what level of effort you want to put into it and what you happen to have in the house. This simple lemon-only recipe works when you’re in a pinch.
Serve the guacamole with Way Better Chips which are organic and GMO free, sliced carrots, cucumber and celery. My son can’t even wait until dinner to start…..
Add a drizzle of avocado oil to the guacamole to keep it from going brown. It’s useful well when packing it in a lunchbox or serving at a party.
