On a cold day, there is nothing better than a hot chocolate. Sometimes I think my kids want to to go out and play in the snow just so that they can come in and have one. They dump their wet, snowy clothes at the back door and come running into the kitchen, with their bright red cheeks, and runny noses, shouting “Hot chocolate please!” Who could resist?
- Nut Milk
- almonds - 1/3 cup (soaked for at least 4 hours in water)
Almonds are a rich source of Vitamin E, calcium, folic acid, as well as the minerals magnesium, selenuim, phosphorus and zinc. Almonds are wonderful for maintaining skin elasticity as well as helping to lower cholesterol. They are also a good source of protein.
- cashews - 1/3 cup (soaked for at least 4 hours in water)
Cashews make you feel good and look good. High in minerals, they support your heart ,brain, bone and nerve health. These nuts are good for your skin and nails and are also an effective anti-depressant.
- brazil nuts - 1/3 cup (soaked for at least 4 hours in water)
- vanilla - 1/2 tsp
- water - 4 cups
- himalaya salt - dash
- For Hot Chocolate
- raw cacao powder - 1 tsp per cup
Raw Cacao is rich in cell-protecting anti-oxidants, as well as containing a wide variety of vitamins and minerals. This wonderful bean not only makes everything taste good, it makes us feel good too.
- honey - 1/2 tsp per cup
This recipe will yield 4 cups of nut milk
Rinse the nuts until the water is clear.
Put all of the ingredients, including the water that the dates were soaked in, in a blender and blend until smooth.
Strain the almond milk either through a strainer with a paper towel, or a nut bag. That gets out all of the nut and date bits and gives it the consistency of milk.
To make the hot chocolate you heat the nut milk on the stove and add 1 teaspoon of raw cacao powder and 1/2 teaspoon of honey for every one cup.
I like to serve this hot chocolate with a tablespoon of coconut milk whipped cream. It makes it a totally decadent experience. The coconut milk whipped cream melts really quickly into the hot chocolate, so quickly it was gone by the time I got my camera, but you can taste it, and it is oh, so good.
I can’t imagine a better way to warm up those cold, red cheeks than this.
