There are very few foods that pack the nutritional punch that hummus does. With ingredients like this, how can you go wrong?
The chick pea or garbanzo bean is high in protein, fiber, and is a good source of minerals. This bean can help lower LDL cholesterol and helps to control and maintain insulin levels in the body. This reduces your risk of type 2 diabetes and can help with weight loss.
Tahini is made from ground sesame seeds. It is packed with vitamins (most notably the B’s) and calcium. Tahini supports and can even increase metabolism as well as enhancing immune and nervous system function.
The medicinal properties of Garlic are legendary. Garlic is known to prevent heart disease, cancer, and even the common cold, just to name a few.
Similarly Lemon, with it’s C, B vitamins and phosphorous proteins, helps to strengthen the immune system, and enables the body to fight disease.
I mean, can it get any better? Yes, it can. Eden Organics garbanzo beans are packed with Kombu in the water. This deep sea vegetable offers the broadest range of minerals found in any other food. You will need:
I can of Garbanzo Beans. Preferably the Eden Organics brand for all of the above mentioned reasons.
2 tablespoons of Tahini
1 lemon
1 clove of garlic
1/3 a teaspoon of salt (preferably a good quality sea salt or the pink Himalaya salt)
When you drain the garbanzo beans, reserve 1/2 the liquid they came in.
Put the garlic, beans, tahini, the juice of 1 lemon, 1/2 the liquid the beans came in, and salt into a food processor and blend until smooth. Taste. You may want to add a bit more salt and or lemon. It is always better to put too little in and add as you go. That way you don’t overdue it.
That’s it. Easy, right? And so good for you.
I give it to my kids as a dip (they call it the hummus star),
and as a sandwich with sliced avocado on whole grain bread.
